Yep it’s that time again and this month C.R.E.A.T.I.V will be showcasing an African delicacy comes from the West African nation of Liberia;
Liberian Rice Bread is a traditional Liberian recipe for cake made with cream of rice cereal and flavoured with ginger and nutmeg. These thick squares of moist andspicy "bread" resemble carrot cake with a bit of crunch. They are delicious to snack on anytime, or may be served as part of an African meal. In a pinch, substitute under ripe bananas for the plantains. The bread also can be baked in a disposable 11 1/2-by 9-inch foil roaster pan.
The Ingredients are as follows;
50g rice semolina (Cream of Rice cereal)180g granulated sugar3 tbsp ground ginger
1 tsp nutmeg1 tsp baking soda1/2 tsp salt240ml milk180m2 eggs
1 tsp vanilla extract4 plantains, mashed (or
4 green bananas)
Cooking Instructions: Preheat oven to 350 degrees. Spritz a 9-by-13-inch pan with non-stick baking spray.
Combine dry ingredients in a large bowl. In a smaller bowl, mix eggs, oil, vanilla and mashed plantains. Add milk and combine. Add wet ingredients to dry ingredients and mix well. Transfer to baking pan. Bakeabout 30 to 45 minutes or until done. The pan size will make a difference in the timing.,Makes about 12 servings.
I have not tried it myself but I have to say it looks delicious. May have to give it a try in the very near future. If anyone has tried it before let us know if it tastes as good as it looks!
